Easy Lunch Box Salad


This is a really simple ”throw together” lunch or salad option. great for a snack or can be bulked out with soem extra protein (sliced chicken, cooked salmon or even some boiled eggs). i actually think this is a great, nutritious salad option for a BBQ too!


I use this as a speedy mid-week meal prep option because it takes about 5 minutes to do! I prep the first half of the ingredients in bulk And store in individual containers and then top with the remaining ingredientS each morning. This ensures those last few ingredients are still fresh and vibrant on the day you eat them and it’s worth the extra 2 minutes that takes. You can’t escape the nutritious benefits of this salad- packed with wholesome veggies and protein-rich chickpeas and feta. Yum!

Lunch box salad

Makes 4 portions


Ingredients

2 cans Chickpeas

1 red onion, finely sliced

1 can sweet corn

Small jar of roasted peppers, roughly chopped

Freshly ground black pepper

Sea salt


Cucumber

Cherry tomatoes

1 block feta cheese cut into 4 pieces

Freshly squeezed lemon juice

Fresh basil

Fresh mint


Method


1. In a large bowl, throw in the chickpeas, sliced red onion, sweet corn, sliced peppers and season with the pepper and salt.


2. Mix everything together and divide into Tupperware.

3. To keep everything fresh and crunchy, I prep this the first bit (as above) advance and then throw the cucumber, tomatoes, feta, squeeze of lemon juice and chopped herbs in each morning. It only takes about 2 mins and ensures everything keeps perfectly!
