Cajun Cod Burgers

We’ve just moved house which requires a full top to toe renovation- including the kitchen. What we currently have is a far cry from the beautiful kitchen we had in our old house but we have big plans for a huge extension and I’m already shopping around for the new dream kitchen!

For now though, its important that we make the most of what we’ve got, although it does mean nothing complicated as half my kitchen is still in boxes! Simple cooking doesn’t have to be boring and this recipe takes a few basic ingredients to make a great meal that everyone should enjoy!

Cajun Cod Burgers

Serves 4


4 square cod fillets

1 1/2 tbsp Cajun seasoning

Freshly ground salt and pepper

Drizzle of rapeseed oil

To serve:

4 part baked ciabatta rolls

1 large ripe avocado, sliced

Spinach leaves

Lemon, chilli and garlic mayo:

4 tbsp mayonnaise

Juice from 1/2 lemon

1/2 tsp garlic paste

1/2 tsp chilli paste (optional)


1. Pre-heat oven time 180°C

2. Pat the cod fillets dry with some kitchen roll. Place into an oven proof dish and cover the fillets on all sides with the Cajun seasoning, salt and pepper. Drizzle with oil and bake in the oven for 12-15 minutes

3. Add the ciabatta rolls with 10 minutes to go for the fish to be cooked.

4. Make your mayo by mixing the mayo, lemon juice, garlic and chilli if you’re using. Add a dash of freshly ground pepper and stir.

5. Cut your ciabatta rolls in half, add a base layer of spinach to the roll, top with a cod fillet, slices of avocado and a tablespoon of the garlic mayo.

You can serve with chips, a bowl of coleslaw, a gigantic salad or anything else you might fancy!
