Banana Nut Granola

Oh. My. Goodness.


Please please try this granola recipe! It is absolutely DELICIOUS!! I’m so excited about this recipe and imagining how many different ways I can use it to eat every last delicious oaty bite!


My first bowl was simply Greek yoghurt, lots of granola and some sweet raspberries. Holy crap it was GOOD! Check out the recipe, give it a go and let me know what you think!


Banana Nut Granola


Ingredients


3 cups rolled oats

3/4 cup chopped Brazil nuts

1/2 cup chopped pecans

3 Tbsp coconut sugar

1/2 tsp salt

1/2 Tbsp cinnamon

1 Tbsp flaxseed

1/2 cup honey

1 tsp vanilla extract

1 large over-ripe banana


Method


1- Preheat the oven to 180°C.


2- Mash the banana in a medium sized bowl.


3- Add all remaining ingredients to the bowl and fold gently together to combine. The mixture will clump together- this is good! Don’t over mix....


4- Tip the mixture onto a large baking tray and spread evenly.


5- Bake for 20 minutes. Remove from the oven and turn the clusters around in the tray to ensure even baking. Bake for a further 5-10 minutes until crunchy and golden brown (be careful it doesn’t over cook or burn towards the end!).


6- Allow to cool and store in an airtight jar.

Enjoy with yoghurt, milk or just grab a handful for snacks!
