This is a BRILLIANT prep ahead breakfast. It tastes just like banana bread and the idea of having chocolate for breakfast is a total WIN for me!
Admittedly the slice I ate fresh out the oven was just amazing with a slight crunch to the edges but the 3 breakfasts that followed (each slice microwaved before being topped with yoghurt and banana) were just as good and utterly comforting on these chilly winter mornings.
10 mins to make. 45 mins baking time. Breakfast sorted for days.
Banana Bread Baked Oatmeal
Serves 4
Ingredients
2 medium bananas, mashed banana
1 1/2 cup milk of choice
1 egg
1/4 cup maple syrup
1 tsp vanilla
1tsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
2 1/4 cup oats
50g chopped walnuts
60g chopped dark chocolate or chocolate chips
Method
1. Pre-heat the oven to 175°C (fan).
2. Mash the bananas in a bowl and add the milk, egg, maple syrup and vanilla.
3. Add the baking powder, cinnamon, nutmeg and salt. Whisk together.
4. Add the oats, chopped walnuts and dark chocolate and fold together.
5. Lightly grease a 20cm square baking tray (or you can use a silicone pan or even a cake tin of this is what you have).
6. Pour the oat mix Into the pan, level out and bake for 40-45 minutes until golden. Leave to cool for 5 mins before serving.
7. This is epic with some yoghurt and fresh banana sliced on top. You can have it hot or cold but I love this hot, fresh out the oven!
