Baked Pear and Ginger Oatmeal with Dark Chocolate

I’m constantly searching for breakfasts I can prep ahead and have quickly to hand in a busy morning. Ultimately this stops me instantly grabbing toast as a fly out of the door. All this ever does is leave me hungry and searching for breakfast number two by 10am!!


My overnight oats recipe is my number 1 favourite but occasionally you do need something different! So welcome my baked oatmeal recipe. I LOVE this flavour combination so this is my starting point and I need to do some more work to develop this recipe further and get some more awesome flavours on the go. Baked Oatmeal with Pear, Ginger and Dark Chocolate

Makes 6 Servings


Ingredients

270g whole oats

750ml dairy or almond milk

3 pears

1/3 cup Maple syrup

4 balls of stem ginger (in syrup)

1 egg

2 tsp baking powder

1/2 tsp salt

1 1/2 tsp vanilla essence

100g chopped dark chocolate

20g dark chocolate chips


To Serve:

Ginger yoghurt

Sliced pears


Method


1- Core and chop the pear into 1cm chunks. Place in a small frying pan with the maple

syrup and gently heat to soften and sweeten the pears. After 3-4 minutes, remove from the heat and allow to cool.


2- Pre-heat the oven to 180*C. Grease a medium sized baking dish (approx 20cm x 30cm).


3- Combine the oats, milk, egg, salt, baking powder and vanilla essence in a bowl.


4- Finely grate the balls of stem ginger and add to the oats. Add the cooled pears and maple syrup and finally the chopped dark chocolate.


5- Pour into the greased baking dish and sprinkle over the remaining chocolate chips.


6- Bake for 45-50 minutes.


You can serve this warm, fresh out of the oven or leave to cool and eat cold. It will keep for several days to keep you going on breakfast for the week! I like mine with ginger yoghurt and freshly sliced pears!
