My love of overnight oats and the versatile options they offer for breakfast has truly revolutionised by morning routine. I work away a lot in the week and have imite access to catering facilities that don't include a full english breakfast or a mountain of buttery toast. Sadly my metabolism isn't designed for that kind of calorific overload and I want something much more sustainable, quick and easy but most importantly, TASTY.
I'm going to give you my main base recipe for overnight oats and some of the different combinations I use to mix it up each morning and stop this ever getting boring! The options are endless and you can really make this recipe your own! The quantities given below are per person but this recipe can be made ahead and kept for up to 5 days. Just multiply the recipes for as many people/days as you need!
Overnight Oats Base Recipe (vegan friendly) - Makes 1 portion
1/2 Cup Rolled Oats
1/2 Cup Almond Milk (you can use any alternative milk but my go-to favourite is Almond)
2 tbsp Natural Yoghurt (or use a dairy free option)
1/4 tsp Vanilla Extract
1/2 tsp Maple Syrup
1/2 tsp Chia Seeds
Combine all ingredients in a small mixing bowl and let sit overnight for the oats to absorb the liquid and for the mixture to thicken.
Flavours and toppings
Tropical
Add 1/2 mashed banana and 1/2 tsp dessicated coconut to the basic mix. Then top with another dollop of yoghurt, small chunks of dried mango, pistachio and an extra sprinkle of coconut. The dried mango softens up in the oats which is so yummy!
Chocolate and Peanut Butter
Add 1/2 tsp cacao powder to the mix (you could also add 1/2 mashed banana too) and then top with a dollop of yoghurt, 1 tbsp of your favourite nut butter and sprinkle with cacao nibs.
Raspberry and Almond
Add 1/2 tsp ground almonds, a dash of almond extract and some roughly chopped raspberries (fresh or frozen) to the oat mixture. Top with a dollop of yoghurt, fresh raspberies and a sprinkle of toasted almond flakes.
