Healthy Seed and Nut Granola

I just can’t beat making my own granola. It tastes so much better than anything shop bought and you can control how much sugar goes into it too! You can use any nuts you like really. Walnuts and pecans are just a great combo for this and the seeds add great crunch too. The smell of this freshly baked with sweet cinnamon is just divine!


Healthy Seed and Nut Granola


Makes 4-6 portions


Ingredients

1/3 cup maple syrup or honey

2 tbsp vanilla extract

1 large ripe banana

1.5 cups oats

1 cup chopped walnuts

1 cup chopped pecans

1 cup mixed seeds

1 tbsp cinnamon


Method

Pre-heat the oven to 170°C


In a large mixing bowl, mash the banana until smooth and add the maple syrup (or honey), vanilla and cinnamon.


Then add the oats, nuts and seeds and fold together gently. The banana will help the oats and seeds form those precious granola clumps so fold gently until everything is well combined.


Line a large baking tray with greaseproof paper or a silicone mat and spread the granola mix evenly across it. Then bake for 20 mins before gently mixing the granola again on the tray. Bake for a further 20-25 mins until golden and crunchy. Bake for a few mins longer if needed!


Allow to cool on the tray and then store in an airtight container for up to 2 weeks.
